Homemade Pici

INGREDIENTS

For the pasta dough:
200g all-purpose flour
100ml water
A pinch of salt
1 tablespoon olive oil

For the sauce:
4 tablespoons olive oil
2 cloves garlic, minced
1 can (400g) crushed tomatoes
Salt and pepper to taste
Fresh basil leaves, chopped (optional)
Grated Parmesan cheese for serving

HOW TO MAKE PICI

Make the Pasta Dough:
In a bowl, mix the flour and salt
Gradually add water and olive oil, mixing until a dough forms
Knead the dough until smooth and elastic, about 10 minutes
Wrap in plastic wrap and let it rest for at least 30 minutes

Form the Pici:
Divide the rested dough into small pieces
Roll each piece into long, thin ropes about the thickness of spaghetti

Cook the Pici:
Bring a large pot of salted water to a boil
Cook the pici for 4-5 minutes, or until they are al dente
Drain the pici


Prepare the Sauce:
In a large pan, heat the olive oil over medium heat
Add the minced garlic and sauté until fragrant
Add the crushed tomatoes, salt, and pepper
Simmer for about 15 minutes, stirring occasionally

Serve:
Toss the cooked pici in the tomato sauce.
Serve with fresh basil leaves (if using) and grated Parmesan cheese
